  1. Make ready 4 cups chopped vegetables
  2. Make ready 1 medium onion, chopped
  3. Take 1 medium tomato, chopped
  4. Prepare 2 green chilies, chopped
  5. Take 1 tsp grated ginger
  6. Prepare 1/3 tsp turmeric powder
  7. Make ready 1/2 tsp salt or as required
  8. Get 1/3 tsp kashmiri red chilli powder
  9. Make ready 1/3 tsp nigella seeds (kalonji)
  10. Prepare 1 tsp roasted cumin powder
  11. Prepare 1 tbsp oil and 1 tsp ghee for cooking
Instructions to make Paratha-Mixed Subzi:
  1. Veggies like potato, brinjal, parmal, pumpkin, cauliflower florets, long beans, colocasia and suran to be washed and chopped into small size,so that,cooked quickly.
  2. Boil 3 cups of water with salt and turmeric powder. Add the chopped veggies. Cook for half whistle and let the cooker cool naturally.
  3. Take a kadhi. Heat oil and ghee. Add the nigella (kalonji)seeds and allow to splutter.
  4. Add chopped onion and fry till rawness is gone. Mix chopped chilies, tomatoes,grated ginger,chilli powder and cook on medium flame, till tomatoes cooked.
  5. Now mix the boiled veggies, with the masala, cover and cook for 5 minutes. Then add the roasted cumin powder,mix well and switch off the flame.
