The secret to good soft brown rice idlis is the avalakki / aval / poha. Poha is soaked and ground and added to the batter. I even add poha / aval to my regular idli batter and the texture is unbeatable.

To begin with this recipe, we have to prepare a few ingredients. You can have brown rice idli using 6 ingredients and 4 steps. Here is how you cook it.

The ingredients needed to make Brown Rice Idli:
  1. Prepare 4 cups Brown rice
  2. Prepare 1 cup Whole Urad dal
  3. Prepare 1 tsp Fenugreek seeds
  4. Get 1 cup Brown poha
  5. Get As needed Salt
  6. Get As needed Water

The pan is usually greased lightly before pouring on the batter. Soak Brown Rice and White Rice sperately overnight. Combine fenugreek seeds and Urad daal and soak sperately overnight. Please note that since Brown rice and Black Urad daal are denser than the usual alternatives, its essential that we soak them overnight.

Instructions to make Brown Rice Idli:
  1. Wash rice and urad dal well under running cold water. Soak this in water for around 6 to 7 hours. - - Soak poha in one cup of water.
  2. Drain the water from urad dal and grind into smooth paste in wet grinder. Add needed water while grinding. Batter should not go runny. So add needed amount of water. - - Once done take the batter and keep in the bowl. Now grind the poha. No need to drain the water. Once done take and mix with urad dal. Keep aside. - - Drain the water from rice and grind to smooth paste. Add enough amount of water. Once done mix this with urad dal batter nicely until everything mix together into one batter.
  3. Add enough salt and mix. Keep this in warm place and allow to ferment around 7-9 hours. - - Once ferment time finished mix the batter one more time thoroughly.
  4. Now boil water in idli pot. Apply oil in idli mould, pour the batter. Let it cook until batter cooked thoroughly. Once done, after couple of minutes take the idli out using spoon. - - Nice and fluffy Idli ready to eat. Serve with your favourite sambar or chutney. I served with Coriander Coconut chutney. #mycookbook

Its even better if you soak them in warm water and keep at a warm place. Brown rice idli is a healthy idli variety which I started making at home recently. We all know the amazing health benefits of brown rice but we don't use it in our regular cooking. So I wanted to start with idli. There is no much difference between this idli and our usual white rice idli.
