  2. Prepare 1/2 cup semolina fine

  1. In a bowl add wheat flour, semolina, salt, ajwain and ghee and mix thoroughly. Add water little at a time and make a stiff dough. Let it set for 10 minutes. - Roll dough into thick circle of about 12 inches. With a knife slash the roti or use a fork to make indents. Flip it and pinch the roti with thumb and index finger or you can use a small crimper to pinch.
  2. Heat the tawa on low heat and put the roti of the pinched side up and cook on low heat. Flip it over once the first side is cooked. Remove once the pinched side is almost cooked.
  3. Preheat oven to 200 degree on grill. And grill the khoba roti until brown. Drizzle ghee over it and eat with tadka daal.
