Bring the water to a boil over medium heat, cover, then. Directions Wash the rice thoroughly in several changes of water and put in a deep pot. Add milk and bring to a boil. Put the washed lentils in a pan, add water and cook on stove.

  1. First of all, clean the wheat with water and dry it. Now mix it once with a wet hand and put it in the mixer jar and run it on and off mode (Etching mode) so that the upper cover will get removed and it's powder will not form. If you want, you can also bring polished wheat from the market.
  2. Now put it in 4 cups of water and cook it well in the cooker for 15 to 20 minutes.
  3. Now take it out in a big skillet or in cooker itself mash well.
  4. Now add milk to it and cook it well.
  5. Now add jaggery/jaggery powder and cook it well. Always keep it stirring so that it doesn't burn. If it looks too thick, then add some warm water or milk to it.
  6. Now add cardamom - nutmeg powder, dry fruits, kharik(dried dates) powder and cook for 2-3 minutes.
  7. Hot wheat Kheer is ready to serve. - Serve with ghee.

Vermicelli kheer or Seviyan Kheer/Payasam as it is known in India, is a special dessert that is made mostly on the occasion of festivals or celebrations. It is a sweet pudding made from milk, vermicelli, spices and dry fruits. I have added fine whole wheat vermicelli but you can also make these with the slightly thicker version of the vermicelli. Shahi Kheer, also called Makhana Pudding is a very traditional pudding-like dessert. Makhana is puffed lotus flower seed and looks like popcorn.
