Take a bowl and add in whole wheat the flour (atta), salt and a teaspoon of oil. Add in the water and mix well. Add a little more water if the dough is very dry or a little more flour if its too wet. To make paneer momos I used whole wheat flour instead of maida.

- Heat water in a pan till you see bubbles at the bottom of the pan.
- Add salt and maida or wheat flour.
- Mix it well till it comes together and now turns off the heat.
- Take this down on the work surface and knead the dough for a few min till you get a nice rubbery ball.
- Keep aside covered with a damp cotton cloth
- Take one tsp oil in a pan heat it
- Now add chopped ginger garlic and fry
- Add chopped veggies salt pepper and cook till it is dry
- Now add vinegar and soya sauce and cook for a while
- Take this out on a plate and cool it down
- Prepare the steamer by heating water and oil the plate keep it aside
- Roll the dough really thin apply water to the edges with your finger tips
- Now stuff it with the prepared mix and seal the momos
- Steam it for ten to 14 min till it is nicely cooked
- You can use some colours natural or artificial to make the dough.Here I have used haldi for whole wheat flour dough
- I have also prepared paneer stuffing by using crumbled paneer and some ginger garlic vinegar soya salt pepper and red chilli flakes
I have successfully made veg momos with whole wheat flour many times before. So I knew that would work well. Next I left out onion and garlic as I was serving these momos for some guests who eat only satvik food. Originally, made with all-purpose flour they are made in both vegetarian and non-veg options. One reason that I cook them for is Health and flavor together.
