Maa Ki Dal is a Punjabi everyday dal made with black urad. There is no addition of butter or cream in this recipe. Traditionally, the creaminess of the dal comes in slow cooking the lentil for hours.
To get started with this particular recipe, we have to prepare a few ingredients. You can have kaali dhal/black urad dal using 17 ingredients and 4 steps. Here is how you can achieve it.
The ingredients needed to make Kaali Dhal/black Urad dal:
- Take 200 gm Split black urad
- Get 3 parts of water atleast (Dhal:water ratio)
- Prepare 1 medium onion finely chopped
- Get 3-4 fat cloves garlic grated
- Take half inch ginger grated
- Get 3/4 teaspoon turmeric powder
- Take 3/4 teaspoon hing/Asafoetida
- Make ready 1 teaspoon mild red chilli powder
- Get 1 teaspoon coriander powder
- Get 1/2 teaspoon garam masala
- Take 3/4 th cup of whole milk
- Get Salt(as required)
- Get Ghee or Oil to temper
- Take 1 teaspoon Cumin seeds
- Get 1 green chilli finely chopped
- Make ready 1 pinch sugar
- Get A few coriander leaves and onion slices to garnish
Add the Turmeric Powder,drained Dal and Slit Green Chillies. Add more Water to help cook the Dal if needed. While black urad dal curries like this kaali dal, dal makhani is popular in North India, black-urad porridge powder, pulav, and sweets are famous in the South. In my native, urad dal sweet porridge is made regularly and served for girls who are reaching their puberty.
Steps to make Kaali Dhal/black Urad dal:
- Pressure cook the dhal along with grated garlic, grated ginger, finely chopped onions, a pinch of hing, kashmiri chilli powder & turmeric powder for 20-25 minutes till soft. If you do not have a pressure cooker, I would suggest soaking the split lentils for about 30 mins atleast and cooking them directly on a pot on medium flame. If you are using the whole black lentil, then please soak for 6-8 hours.
- Once the dhal has cooked to a nice soft texture, allow it to slow cook further in low flame. In another pan, do a tempering with ghee or oil. To hot oil or ghee, add cumin seeds, green chilli and add this to the simmering pot of dhal. Add required salt, sugar and garam masala at this stage.
- Give it all a good mix and allow it cook for a another 5 minutes and then add whole milk. Mix well and cook for 3 more minutes till you start to see a nice creamy consistency.
- Turn off flame and garnish with fresh coriander leaves. Serve with sliced onions.
Black urad dal is believed to strengthen the pelvic bones and uterus. Maa ki dal or kali dal Is made from whole black grams (black dal) or sabut urad dal only. There are many ways of making this black gram dal recipe. It can be spicy or bland as well. It is also not a very rich and heavy dish as no extra cream, butter is added to it.
