Hey everyone, it is Drew, welcome to my recipe page. Today, we’re going to make a distinctive dish, vegetarian dhanshak. One of my favorites food recipes. This time, I’m gonna make it a little bit tasty. This will be really delicious.

Dhansak is a traditional parsi recipe Usually served with brown rice. It is a medley of lentils, vegetables, spices and meat. Being a vegetarian I cannot include meat, so have just made it with lentils, veggies and the spices.

Vegetarian Dhanshak is one of the most favored of recent trending foods on earth. It is simple, it’s fast, it tastes delicious. It’s appreciated by millions daily. They are nice and they look wonderful. Vegetarian Dhanshak is something which I have loved my entire life.

To get started with this recipe, we must prepare a few ingredients. You can cook vegetarian dhanshak using 19 ingredients and 21 steps. Here is how you cook that.

The ingredients needed to make Vegetarian Dhanshak:
  1. Take chana daal/ split chickpeas lentil
  2. Get masoor daal/ split red lentils
  3. Take Tovar daal/Pigeon pea lentils
  4. Get urad daal/split black gram lentils
  5. Make ready cleaned and chopped fenugreek leaves
  6. Take washed, deskined and cubed veggies of your choice(normally pumpkin and brinjal are a must)
  7. Take Salt
  8. Take turmeric powder
  9. Take red chilli powder
  10. Prepare mint leaves cleaned and chopped
  11. Take lemon Juice
  12. Take ginger grated
  13. Get garlic pearls chopped finely
  14. Make ready green chillies made to paste
  15. Make ready Dhanshak powder
  16. Take large onion chopped finely
  17. Get small tomato chopped
  18. Prepare ghee/butter
  19. Make ready Water (depending upon the quantity of lentils and veggies you use)

Coming back to Dhanshak, it is an absolute comfort food from the vastly underrated Parsi Cuisine and is traditionally made with mutton. Of course, in India, like everything else, we make a vegetarian version that is just as delicious. Dhanshak is a Parsi traditional dish cooked with meat. Given the nutritional content of the recipe, ie. the mix of lentils/daals, a rich sauce of protein and vegetables, rich in vitamins, folic acids,minerals and of course Low in cholesterol, this can be easily made with a vegetarian variation.

Steps to make Vegetarian Dhanshak:
  1. Pre soak the lentils at least for 30 minutes prior cooking them after washing thoroughly
  2. Strain the lentils and keep aside
  3. Add the lentils to a pressure cooker and add about 2 cups of water to it. Start the stove now and keep on medium heat
  4. Add the turmeric powder and salt to taste. mix well
  5. Next add half the onions chopped to the lentils
  6. Add mixed chopped vegetables and mix for a while
  7. Next throw in the fenugreek and mint leaves and mix well for about 2-3 minutes
  8. Now pressure cook for upto 4-5 whistles and switch off the stove
  9. For the masala/tempering:
  10. Melt ghee/ butter in a wok and add the remaining onions and sauté till they are slightly brown
  11. Next add the tomatoes and cook on Low heat covered till they are soft
  12. Add chopped garlic-ginger and cumin powder
  13. Followed by red chilli and Dhanshak powders
  14. Add the green chilli paste.Mix well and take off heat
  15. Open the cooker to check the lentil mix. If slightly uncooked, use a masher to mash the lentils and vegetables
  16. Put it back on stove and keep on Low heat
  17. Add the masala/tempering prepared to the lentils and mix well and let simmer
  18. Next add the lemon juice
  19. Finish by mixing coriander leaves.
  20. Serve warm with the accompaniment of your choice
  21. My tip: if you are unable to find Dhanshak masala, use a strong flavoured curry or regular garam masala powder

The one dish that stuck out the most for me was Dhansak. Having the dish with chicken was nice, but I was hoping to see if there is a way to make this a vegetarian dish. After searching around for a nice recipe, I decided to tweak VeganRicha's Veggie Lentil Dhansak to make a nice Dhansak. Dhansak generally is made by cooking some meat with a mixture of lentils and vegetables, while the vegetarian version uses just lentils and veggies. Dhansak can be simply spiced to retain the flavors of the vegetables or lentils, or can be flavored with various spices.
