- First soak the rice for 2 hours drain the water and let it be samp but not wet. Then make a fine powder of it and roast it for 2 mins on low flame and keep aside. Then make a powder of urad dhal and pass this and rice flour through a sieve to get a fine powder.
- Now add salt hing and coconut powder and mix well. Then add melted butter and mix well. Slowly incorporate water to make a soft and smooth dough. Once done grease your hands and make small balls and deep fry it in oil and serve.
But one warning though - they are highly ADDICTIVE! :) Tips to Avoid Uppu Seedai(s) from bursting in hot oil One of the main reasons for this innocent looking snack to scare the hell out of cooks is that at times it starts bursting while you are frying, scattering hot oil all over the kitchen. Vella seedai is another mandatory preparation for Gokulashtami and this is more liked by kids. Unlike uppu seedai there is no risk of bursting but there is one common problem with Vella seedai. The magic of the South Indian tempering. If you are going to experiment with South Indian cooking, your kitchen needs to be stocked with rice, tamarind (or kokum), sambhar powder and rasam powder, ghee and cooking oils like groundnut, coconut or sesame oils.
