I used a mix of tuvar dal, chana dal, split moong dal with skin, urad dal and masoor dal. Adai dosa can be made thick or thin, soft or crisp all to suit your taste. To make adai dosa recipe, mixed dal/ lentils like chana dal, toor dal, moong and urad dal are used along with rice. Similar to the plain dosa recipe, each family has their own proportion of dals and rice.

Instructions to make South Indian Adai (Mixed dal dosa toor dal,chanadal urad dal):
  1. Soak all the dal and rice together for 4 hours then grind to a coarse paste with ginger jeera salt curry pata hing and red chilli, add little water to it to make a dosa consistency batter. You can add onions to it as an option just before making dosa.
  2. Ferment for two hours and make like dosa on hot tawa. Cook on slow flame to make it crisp.Some dont add urad dhal but adding it will help the dosa not stick to the tawa. Serve with sweet chutney or coconut chutney.

We will need parboiled rice, raw rice, chana dal, toor dal, urad dal and moong dal. Wash and soak the ingredients in water for a couple of hours. Do not add lots of water. Just enough water to cover the ingredients. Once the ingredients are soaked for a couple of hours, grind them in a mixie with the water used for soaking to a thick paste.
