- Soak dried red chillies in warm water for half an hour. Then blend them along with garlic and little water in a blender jar to make smooth chilli paste.
- Now take iron wok only. Iron wok brings out exact street flavour in the bhaji. Heat 2 tbsp butter.
- Add chilli paste and cook for 2 minutes.
- Now add very finely chopped tomatoes and capsicum. Add 1 tsp salt. Mix nicely. Cover with lid and let it cook at low flame for 3 minutes.
- After 3 minutes, uncover and start mashing the material in wok for 1 minute.
- Now add pao bhaji masala and kashmiri red chilli powder and stir for another 2 minutes. Now add mashed potato and mix nicely. Stir for another 2 minutes by covering from lid.
- Now uncover and add around 1.5 cups water. Bring to boil.
- After a boil, simmer with lid at low flame for another 3 minutes.
- Add coriander leaves and cream. Mix and stir for a minute.
- Switch off gas and squeeze 1/4th lemon juice. Mix and garnish with more fresh coriander and enjoy with pao cooked in butter😋
