Steps to make Kharpudi Puri or Pudi stuffed with sweet fragrant besan:
- Take all-purpose flour in a mixing bowl and mix oil in flour till you get crumbled texture.
- Flour should hold shapes that means moyan is perfect. Now slowly slowly add water to knead a semi-soft dough. Cover and keep aside for 15- 20 minutes.
- Take a cup of besan and start dry roasting it on low flame till light brown in color and you get nice aroma.
- When the besan is brown and aromatic Please switch off the flame. Be careful and keep stirring the besan or it will burn. Let it come to room temperature then.
- Now grind sugar along with cinammon stick, cloves, green cardamom and black pepper means make powder of all dry spices with sugar.
- Now add this sugar and spice powder, little oil to besan and mix well. Add milk slowly to make a stiff dough of besan. stuffing is ready.
- Now break the flour dough into equal size of balls. same we have to do with besan dough. Besan ball has to be smaller than Flour ball. Now stuff the sweet ball in the flour ball.
- Roll the stuffed ball a bit like a puri and with the help of knitting needle make small holes all over it. Similarly make all the kharpudi.
- Heat oil and fry all pudis on low to medium flame till golden brown in color.
- Let it come to room temperature then enjoy and store in airtight container
