The ingredients needed to make Mushroom & Almond Madras:
  1. Take 1/2 jar Madras curry paste (140g)
  2. Get 4 large field mushrooms
  3. Prepare 1 knuckle fresh ginger, grated
  4. Take 1 large clove garlic, crushed
  5. Make ready 1 tomato, chopped
  6. Make ready 2 tbsp oil
  7. Take 1 tin full fat coconut milk
  8. Take 3 tbsp ground almonds
Instructions to make Mushroom & Almond Madras:
  1. Fry the onions gently in the oil until soft. Add the ginger, garlic and tomatoes and continue to cook for a few minutes.
  2. Add half a jar of curry paste, mix and fry it for a good 5 mins. Add 50 mls water, mix and allow it to evaporate off.
  3. Add the coconut milk and almonds, give it all a good stir then add your mushrooms. Simmer for 30-40 mins.
  4. I served mine with cauliflower rice but normal rice and a naan would be pretty good too I think 😋
