Mix ginger, garlic, turmeric, garam masala and salt together. Heat oil or ghee in a wok or skillet. Add sliced onions, green chillies and green peppers and fry for a couple of minutes. Cook it until the oil starts to separate from the spices and tomatoes.
  3. Once the masala cooked, blitz it with little water until fine smooth purée.
  4. Take the chicken out of the fridge, put 4-5 tbsp oil in the pot. Once the oil is hot, shallow fry the chicken for 15-20 mins till it reaches the temperature of 75 degrees c. Once the chicken is cooked take it out of the oil and place it in the clean bowl.
  5. Heat 1 tbsp oil and put 1/2 onion, ginger and bell pepper in the pan. Cook it for 3 mins without any colour. Add chicken and the sauce that puréed earlier. Mix it all together till all the veg and chicken coated very well to the masala. Cook it for another 10 mins.
  6. Taste and adjust the seasoning. Once cooked serve it in the serving dish with fresh chopped coriander and slice of green pepper.
  7. Enjoy.
