  8. Prepare 1/2 cup fresh coconut

Instructions to make Pesarattu dosa:
  1. Firstly, rinse the moong lentils a couple of times in water. Then soak the lentils for 4 to 6 hours or overnight in enough water.
  2. Drain and add the moong beans along with cumin seeds, ginger, green chilies and salt in a blender.
  3. Add some water and grind into a smooth batter.  - If using rice flour then mix it at this stage and adjust the batter consistency to be similar to a dosa batter.
  4. On a griddle or flat pan, spread a little oil or ghee. With a ladle, pour the dosa batter on the griddle and spread the batter into a round shape.
  5. Pour some oil on the sides and in the center of the dosa. Flip and cook both sides a couple of times till crisp and browned.
  6. For the chutney, blend everything together and serve with hot Dosa.
