The ingredients needed to make Mithi puri:
- Prepare 3 cups wheat flour
- Prepare 1/2 cup jaggery
- Take 2 tablespoon oil
- Prepare 1/2 cup warm water
- Take 2 tablespoon sesame seeds

Potato masala is the same dish that is used for stuffing masala dosas. It is similar to the puri masala but there is no tomato used here. Suvali is also known as Suvari, Suwadi, Kharkhariya, Kharkharia, Crispy Sweet Puri. It is pinkish-brown in color, mildly sweet, crispy, and crunchy in taste.
Steps to make Mithi puri:
- In a microwave safe bowl add the jaggery and water and microwave for 30 seconds. - Remove and stir until jaggery incorporated with water.
- Sieve wheat flour in a wide bottom dish. Add sesame seeds and oil and mix well. Slowly add the jaggery water and make a soft dough. Please note this dough shrinks so do not make it stif. Knead well using a little bit of oil.
- Divide the mixture into 6 or 8equal parts and roll it out thinly. With a cutter cut small discs. - Deep fry them immediately on medium heat as they tend to shrink. Mitthi puri is ready. Enjoy on its own or with a cup of tea. - Some like it crispy so to make them roll small puris individually.
Made using all-purpose plain flour or maida, Clarified butter or ghee, milk, sugar, and cardamom powder. Methi puri is a crisp and tasty tea time, deep fried snack prepared and flavoured with fenugreek leaves. It is crisp and tasty snack which is generally prepared during the festival seasons of diwali to share with family and friends. Soak jaggery in little water, strain the water to make the jaggery water. Take a bowl and add wheat flour, salt, cardamom powder, jaggery water and mix nicely to make a medium tough dough.
