  1. First thinly sliced the nuts and soaked the rice in a water and keep it aside.
  2. Turn on the heat and put the milk non-stick pan over it, let the milk boil. - Boil the milk on low heat till the milk reduce to half of the original quantity.
  3. Add washed rice and mix it properly, cook it on low heat for 10-12 minutes, keep stirring in between.
  4. Add sugar and mix it properly, add cardamom powder into the milk and stir. - - Add sliced nuts (reserve some garnishing) into the milk and cook it for 2-3 minutes.
  5. Increase the heat and boil it for 2 minutes, keep stirring continuously. - - Turn off the heat, add saffron and leave the kheer for 20 minutes. - Garnish with nuts and saffron. - - Ready to serve.
  6. #Tip: - - Do not add rice before sugar because the rice will not cook properly. - - serve it hot or refrigerate it for 2-3 hrs and serve cold.

It's one dessert that I grew up eating on a regular basis. Whenever there would be a celebration or a festival or just because we felt like eating a dessert, kheer was what mom always made. Kheer is not just any rice pudding in which you quickly cook rice in sweet milk and sweep the sweat from your forehead and pitch your spatula in the air in hurrah. Neither is the liquidy stuff you get at Pakistani/Indian restaurants in the states. I'll take a glass of sweet lassi instead thanks.
