Persian Naan Bread::
- Make ready all purpose flour
- Prepare warm milk

In a large bowl mix milk, egg, melted butter and sugar. Sheermal, also known as Shirmal or popularly known as Naan ki roti across Hyderabad. It is a slightly sweet naan/flatbread made with all-purpose flour (Maida). This flatbread is baked in a tandoor or oven and is a most common dish in the Middle East and Asian countries and also among Pakistan and India.
Instructions to make Sheermal bread:
Persian Naan Bread::
- In a bowl, mix sugar, yeast, and warm milk together. - In another bowl mix flour with salt and then pour milk mixture in flour add Beaten egg, and melted butter in it. Combine together.
- Grease your hands with oil and knead the dough with your hands for 6-7 minutes until is smooth and no longer sticky. - Cover the dough, and let to rest until double in size.
- Preheat the oven to 160°C. - Line your baking tray with parchment paper and once dough is ready, place it on the parchment paper. Sprinkle some flour top of it and deflate the dough..(see in pics) - Cover the dough and let to rest for another 20 minut Then give favourite decoration or design to the bread. Egg wash top of bread and garnish with sesame seeds & nigella seeds. - Transfer the dough into the oven and bake for 20-25 minutes until golden brown. - Enjoy !
Sheermal is a delicately rich saffron scented flatbread, made soft with the use of ghee (clarified butter). The use of the saffron makes it a Regal Item and it is great with most Tandoori Style Recipes. This dish comes from the Hyderabadi Nawabi cuisine, which is influenced greatly by Mughlai Cuisine. Shirmal is a mildly sweet naan made out of maida, leavened with yeast, baked in a tandoor or oven. Shirmal was traditionally made like roti.
