  1. Sieve gram flour. Rub in 4 tblsp butter and milk. The mixture should resemble fine bread crumbs.
  2. In a thick based pan, heat the 500g butter on low till melted. Add the above flour mixture and braise on low to medium heat till the mixture turns dark golden brown. This will be a representation of the final colour of the chana magaj. Stir occasionally. Should take approximately 1 hour. Take care not to burn the butter. Add the chopped almonds when the mix is almost ready. If you add the almonds too early, they will toast in the butter and change the flavour of the almond.

  4. When cool, add icing sugar, klim and spices and mix well. Pour into lined dish (plastic wrap), sprinkle with coloured almonds or chopped almonds, glitter and let set.
  5. You can also put it straight into moulds, just keep the toppings for when you turn out the mould.
