  1. Prepare 3-4 lbs Beef Roast (Bone or Chuck)

  5. Prepare 2 Bay Leaves (whole)

  10. Take 1 Onion (medium, chopped)
  11. Prepare 1 c Frozen Mixed Vegetables
  12. Prepare 1 Can Tomato Sauce (small)
  13. Make ready 16 oz Can Tomatoes (approximately 1 lb)
  14. Get 1/2 c Bell Pepper (chopped)
  15. Make ready 2 c Cabbage (chopped)
  16. Take 2 Tbsp Parsley, (chopped)
  17. Make ready 1/2 tsp Dill Weed
  18. Make ready 1 Yellow Chili (optional)
  19. Get 1 Tbsp Sugar
  20. Take 1 tsp M.S.G

In English, the word "borscht" is most often associated with the soup's variant of Ukrainian origin, made with beetroots as one of the main ingredients, which give the dish its distinctive red color. The same name, however, is also used for a wide selection of sour-tasting soups. Calling this beetroot soup a Polish classic is as inflammatory as an evening on the sliwowica - for a start, the name we generally know it by in this country, borscht, is Russian. A hearty soup made of beef or pork stock, beets, cabbage and potatoes.

Instructions to make Borsch:
  1. Wash beef in a colander. Bring water to boil in a pot. Add beef, lima beans, and potatoes and bring to boil. Add salt and pepper and simmer for approximately 2 hours until the meat is tender.
  2. Remove meat and add carrots, celery, onions, and mixed vegetables. Cook 15 minutes.
  3. Break up tomatoes by hand and add the rest of the ingredients. Simmer for 30 minutes longer.
  4. Remove potatoes and mash, then return to the soup.
  5. Remove the bay leaf and chili.
  6. Before serving, take the roast that was cooked in the soup and cut it up into 1 1/2" squares and place into a casserole dish one layer deep. Sprinkle with salt and pepper. Bake in a 375 degree oven until browned. Serve meat on the side with mustard or horse radish. Eat with the soup and bread.
