  1. Peel and wash potato and cut into small cubes. Heat 1tbsp oil in a kadhai and fry the potatoes on medium flame till golden. If u want u can cover the lid as well stirring in between so that the potatoes r properly cooked. Keep aside.
  2. Meanwhile in a separate pan heat ghee and add the seviyaan. Roast till it is golden and keep aside.
  3. While the potato is cooking u can also chop all your vegetables. In the same kadhai after taking out the potatoes u can add mustard seeds, curry leaves and slit green chilli, let it splutter and then add chopped onions, stir fry till it turns pink then add the chopped veggies, salt to taste (around 1 tsp), chilli powder and Turmeric powder.
  4. Mix everything well for 1 min then add 2.5 cups of water cover the lid and let it cook on slow flame for 5 mins. Then add the roasted vermicelli to it. Cook on medium flame till all the water is absorbed and the seviyaan looks dry. Garnish some greens of spring onion and chopped dill leaves. Serve hot for breakfast or evening snack
