A delicious Summer friendly Carrot Raita recipe with grated carrots, curd and a quick tempering. A side dish or condiment from South Indian Cuisine that is Gluten Free and Vegetarian. Hence many raitas use ground mustard seed powder or mustard seed tempered in the oil. I have made carrot raita using fresh curd with grated carrot.

  1. Mix carrot, yogurt and salt in one bowl.
  2. Heat small kadai add oil. Once oil hot add mustard, cumin, green chilli, chopped onion and mint. Saute a bit and add this to raita.

Mustard seed powder gives a very unique flavor to the raita. To get the crunch while eating raita I have added peanuts and walnuts. I like to add chopped dried apricots to the raita.
