- Take 200 g Enoki
- Make ready 200 g Itokonnyaku *OR Konjac Noodles
- Get 1 Carrot
- Prepare 1 tablespoon Oil
- Make ready 2 tablespoons Soy Sauce
- Make ready 1 tablespoon Mirin
- Make ready 1/2-1 tablespoon Sugar
- Make ready Chilli Flakes
- Take Toasted Sesame Seeds

Steps to make ‘Kimpira’ Enoki, Carrot & Itokonnyaku:
- Cut off the brown bottom of Enoki and clean them. Cut half in length. Drain and rinse Itokonnyaku (Konjac Noodles) and cut into 5cm in length. Slice Carrot into thin strips.
- Heat Oil in a frying pan over medium high heat, cook Itokonnyaku and Carrot. When Carrot is nearly cooked, add Enoki. Add Soy Sauce, Mirin and Sugar, and some Chilli Flakes if you like it spicy, then stir-fry until the sauce is almost gone.
- Sprinkle some Toasted Sesame Seeds on top.
Most commonly it is made from, gobo, renkon and carrots, although daikon and goya (bitter melon, I'm not talking about the canned food) are also good. Gobo/carrot and renkon kimpira are my favorite kimpira dishes, I don't think I could choose which one I liked better. The great thing about enoki is that it's easy to prepare since you don't have to wash it much and it cooks fast. I wouldn't recommend eating it raw but you don't want to over cook it.
