Rinse the okra and dry it well, then trim and discard the cone-shaped tops. Place the pods in a mixing bowl; toss with the lemon juice and the coarse sea salt.

- Add the sliced okra into the rice and mix it well. Cover the pot. Simmer the rice pulao for another 8 minutes until well cooked with lower heat.
- Switch off the heat. Steam the pulao rice with the rest of heat.
- Serve the pulao with some raisins and garnish with coriander leaves.
Heat the oil in a large pot over medium heat. Add the onion, carrot, garlic, and ginger and stir constantly, so as to not burn the onions or garlic, for about six minutes.
