  10. Prepare 1 handful sundried Tomatoes
  11. Make ready 1 tbls Artichoke quaters in oil and a little of the oil
  12. Make ready 1 tsp dried Basil

Add in the onions, garlic and mushrooms together with the chopped chorizo to the pan and fry for a couple of minutes or until the vegetables have begun to soften. Peel and finely slice the onion and garlic, then roughly chop the tomatoes. Halve, deseed and finely slice the chilli, then pick and finely chop the oregano leaves. Heat a little olive oil in a large frying pan over a medium heat.

  7. Mix and fry for 2 minutes add lots of black pepper.
  8. Add all this to a greased oven dish and add the tomatoes and fresh peppers. Squeeze a bit of lemon all over.
  9. Cook in a preheated oven medium - high for 20 minutes.
  10. Add the sundried Tomatoes and the Artichoke with some of the olive oil.
  11. Lastly sprinkle the Basil over the top then add it to the oven.after 20 minutes serve hot
