- Make ready 1/4 tsp Malt vinegar

Nestle the cherry tomatoes and lemon wedges in the tray. The potatoes should be golden, the fennel tender and the fish opaque - it will flake easily when pressed with a fork. Scatter sliced fennel in center of foil as bed for fish. Top fennel with lemon slices, then fish, spacing slightly apart.
