Pour off any excess fat as you cook. Heat a heavy based (preferably iron) frying pan and put the duck breasts into it skin-side down. Transfer them to a plate and rest under cover. Place a piece of parchment paper cut to the size of skillet over carrots; bring to a simmer.

- Half way through cooking, pour the glazing stock over the duck and return back to oven. Add the carrots and Pak Choi in the leftover glazing stock and simmer on medium low heat for 5-10 minutes.
- Serving Suggestion :
Transfer them to a plate and cover them with foil so they retain their warmth. Pour off the rendered duck fat and turn the heat up to medium. Reheat the red wine sauce on the hob and cut the dauphinoise into portions. Drizzle the plate with the sauce and serve immediately Honey & Orange Glazed Duck Breast.
