Peel, core and slice the apple and add to the pan with the beetroot. Fry onion in oil in a large saucepan till soft. Cover with vegetable stock, then add vinegar, salt and pepper. Heat the oil in a large pan, then add the onion and garlic and fry gently until the onion is translucent.

  1. Wash and peel all vegetables
  2. Chop vegetables, wrap herbs in a cotton to make a bundle
  3. Heat the oil in a pot and fry chopped leek and garlic for 2-3 min
  4. Add all vegetables and the water and cook until soft
  5. Take out bundle of herbs and blend the soup
  6. Add salt pepper and vinegar to your taste
  7. Serve with roasted sunflower seeds, crème fraiche and chopped parsley

The beetroot are cooked when the skins rub off easily. When cool enough to handle, rub off the skins and chop the beetroot. Warm olive oil in a large saucepan over medium heat. Stir in stock and season with salt and pepper. Heat half the olive oil in a large pan.
