- Add the potatoes and cover it with water. Bring it to the boil. Reduce heat to minimun and leave it for about 1 hour
Transfer to a plate and leave to one side. While the beef cooks, peel and finely chop the garlic, then peel the shallots and halve most of them, keeping a few whole. Clean out the frying pan and fry the beef in the remaining oil in batches until it is well browned, then tip each batch into the slow cooker. Transfer all the meat to a plate and set aside. Repeat with the remaining meat, adding more oil as needed.
