Meanwhile, in a large pan, heat a glug of oil and add the onion. Add the lentils and stir to coat with the onion mixture. Pour in the stock, then cover the pan and bring to the boil. A great low-calorie, high fibre, vegetarian dhal recipe packed full of flavour.
Steps to make Carrot Dal:

- In a kadai dry roast the moong dal until aroma comes out. Pressure cook dal with one cup of water, salt and turmeric powder. Drain the water keep aside. Mash the dal well and keep aside. - - 2. Grind coconut with cumin seeds with little water and keep aside. - - 3. Chop the carrot and take it, Heat oil in pan add mustard, urad dal, green chilli and curry leaves. Once it splutter then add onion and hing to it.

- Once the onion turns transparent add salt and carrot to this. - - 5. Saute a bit then add cooked dal water. Add half a cup of plain water. Cook carrot until done now.. Now add the remaining dal to this. - - 6. Now add the paste and let it cook until it gets thick.
