The ingredients needed to make Carrot Baji *Curry:
- Prepare 6 Crushed Garlic
- Prepare 2 Onion (*White or Red)
- Make ready 8 Carrots
- Make ready 2 Tbsp Mix Curry Powder
- Prepare 3 Tsp Oil
- Make ready Coriander
Add the eggs and mix in well. The mixture should be like a thick batter. Almost like an uncooked carrot cake batter. Line one large or two medium baking trays with baking parchment.
Instructions to make Carrot Baji *Curry:
- Add 3 Tsp of olive oil in to the pan wait till the oil is hot. Once the pan is hot add 6 Crushed garlic and stir till their a light gold colour.
- Now add the thinly chopped onions, wait till the onions soften up and add salt to your taste.
- Add 2 tbsp of mix curry powder and stir until the mixture has turned soft and mushy.
- Slice the 8 carrots thinly and add to the pan and stir.
- Let it cook for about 20 mins (*till the carrots soften up). Then add chopped up coriander.
- Ready to serve with white rice. Enjoy 🤗
If the mixture looks a little dry add a splash of water. Wash, peel carrots and cut it into cubes. Wash potatoes, peel the skin and cut it into cubes. Chop onions and keep it aside. Heat oil in a pan or kadai, add mustard seeds, when it sputters, add urad dal, red chillies, hing and curry leaves.
