After Jeera is roasted put the chopped onion and fry till it turns light brown. Kofta occupies a special place in my kitchen. I am slightly obsessed to make varieties of koftas. Mixed veg kofta, raw banana kofta, lauki kofta, mutton kofta, paneer kofta, malai kofta to name a few.

- Take chopped onion, green chilli, tomatoes and garlic for gravy.
- In a container put chopped capsicum, carrot, tomato and green chilli.
- Add gram flour in the same container.
- In a separate container put poppy seeds, one can even use corn flour.
- Add salt, turmeric powder, coriander powder, kashmiri mirch powder, curry masala and mix them well do not add water, as the water content of vegetables will be enough to bind them together.
- The consistency should be same as shown in the image.
- Now prepare dumplings and fill dry fruits as shown in the image.
- Put the dumpling in the container of poppy seeds and roll it.
- Heat oil in a pan and shallow fry dumplings.
- Remove them and then in the same pan add chopped onion, garlic, green chilli and tomatoes and let them turn soft.
- Add mixed spices in the pan and switch off the flame.
- Grind them when they cools down adding a tbsp of water then again transfer the grind spices in the pan and add half a cup of water.
- Add boiled and grind spinach into the pan and cook them.
- The gravy is ready then turn off the flame.
- Add dumplings of kofta and serve it with chapatis.
Too often i make mixed veg kofta, but this time instead of putting it in onion-tomato gravy, i added it to spinach gravy to give it a twist and here is the outcome! Mix all the ingredients for kofta spinach, potatoes, cumin seeds, and salt, this mix should consistency of dough. Notes: spinach should be pat dry and potatoes should be firm not overcook. Otherwise mix will be very soft and will not hold the shape after adding to the gravy. Add a splash of colour to your meal with the green gravy.
