Add the garlic, curry powder and thyme. Season with salt, pepper and Creole seasoning. Make the soup: Sauté the onion, carrot, leeks and celery until soft, fragrant and starting to turn golden brown. The more the vegetables caramelize at this stage, the more intensely flavored the soup will be.

Steps to make Vegetable Soup:
  1. Heat the olive oil in a large saucepan.
  2. Add the vegetables (onion,carrots,parsnip,leek,potato) and cook for about 5 minutes.
  3. Add the Vegetable Stock water and bring to the boil.Cover and cook for a further 20 minutes.
  4. Allow to cool to room temperature.
  5. Pour contents of saucepan into your blender and blend for about 30 seconds until completely smooth.Add more stock or hot water if required.
  6. Pour contents back in to the saucepan and add the chilli.Alter the consistency with a little stock or hot water if desired.Season with salt and pepper if required.
  7. Simmer for 10 minutes and serve.
