To make the cake: In a Cuisinart food processor with a shredding blade, or with a hand grater, shred the whole carrots and half of the apple. In the same pan, melt the butter over medium heat. Stir in the honey until dissolved. Add the cherries and simmer over low heat for one minute.

  1. Preheat the oven on 180C. Grease cake tin with butter. Whip 5 eggs white with 20 g sugar in a large bowl.

This is a lovely white cake with glace cherries and sultanas added for those of you who don't want to go to the trouble of making fruit cakes. In a small bowl, whisk together the dressing ingredients, then toss well with the salad and serve!
