The ingredients needed to make Chicken Balls:
  1. Prepare 400-500 g Chicken Mince
  2. Get 1 small piece Ginger *fine grated
  3. Prepare 2-3 Spring Onions
  4. Take 1/2 Carrot
  5. Prepare 2 Shiitake
  6. Get 1 Egg
  7. Prepare 1-2 tablespoons Potato Starch / Corn Starch
  8. Take Salt & White Pepper
  9. Prepare Dashi or Chicken Stock

Chicken Balls Heat the oil in a wok or deep fryer, until it is shimmering. In the meantime cut the chicken into bite-sized pieces, keeping them as symmetrical as possible. Whisk together the flour, water, baking powder and salt in a bowl to give a nice thick batter. Spoon out and place in deep fryer or pot of hot grease over stove burner.

Instructions to make Chicken Balls:
  1. Chop up the vegetables finely, and combine with Chicken Mince, finely grated Ginger, Egg and Salt & White Pepper. Mix well until well combined.
  2. Boil Dashi or Chicken Stock. Using a tablespoon, drop the chicken mixture into the boiling stock and cook until cooked through. Season the soup as you like. I like to season it with Soy Sauce and Mirin.

Remove and place in bowl lined with paper towel to soak up excess grease. Mix the chicken mince with all the other ingredients, adding enough breadcrumbs to bring the mixture together. Heat a heavy-based frying pan over a medium-high heat, add a splash of oil and cook the balls until golden brown all over. Transfer to oven and bake until cooked through. In a mixing bowl add all the dry ingredients for the batter and mix well.
