  2. Prepare 1 small Carrot *sliced into thin strips
  3. Get 1/2 Firm Tofu *200 to 250g
  4. Get 1 tablespoon Canola Oil
  5. Prepare <‘Goma-ae’ Sauce>
  6. Make ready 3 tablespoons Toasted Sesame Seeds *ground
  7. Take 2 tablespoons Sugar
  8. Take 3 tablespoons Soy Sauce
  9. Prepare 1 teaspoon grated Ginger

Cook, stirring, until fragrant, about one minute, and add soy sauce to taste. To make this curry, spinach leaves are first cooked with tomatoes, garlic, ginger and spices and then grind to a fine paste. Tofu is roasted for few minutes on a pan and then added to the spinach curry. This is your healthy, wholesome dinner and you cannot go wrong with this.

Steps to make Tofu, Spinach & Carrot ‘Goma-ae’:
  1. Grind Toasted Sesame Seeds, add other sauce ingredients and mix well. *Find ‘How To Grind Sesame Seeds Using A Plastic Bag’
  2. Wash Spinach well and blanch in boiling water. Dip in cold water to stop cooking further, drain well and squeeze to remove excess water. Cut into 5cm in length. Blanch Carrot strips in boiling water as well.
  3. Slice Firm Tofu. Heat Oil in a frying pan over medium high heat, cook Tofu slices until golden and crispy. Cut into thin strips.
  4. In a bowl, combine Tofu strips and a half of the sauce, then add vegetables and the remaining sauce, and mix well.

I had mine with brown rice and it made for a very filling meal. Cut the tofu into cubes, place them on baking paper and sprinkle some nutritional yeast, salt and pepper over the tofu. Meanwhile, bring a pot to a boil and add the washed spinach leaves. Wilt spinach, then tip out excess liquid. Whizz tofu in a food processor or with a hand blender until smooth, then stir through the spinach with the nutmeg and some pepper.
