- Take 1/2 tsp Turmeric powder
- Take 1/2 tsp Garam masala
- Take 2-3 tbsp Mustard Oil
- Make ready 1/2 tsp Hot clarified butter/desi ghee for drizzling
- Prepare As needed Coriander/cilantro for garnishing purpose
If you don't want to skewer the veggies, just spread the mixed vegetables in a grill basket. Place the sweet potatoes, parsnips and carrots onto the baking trays. Place potatoes, onion and carrots in baking dish; toss with half each of the oil, garlic, thyme, tarragon, salt and pepper. Toss the beets with the balsamic vinegar and whole herb sprigs.
Instructions to make Mix veggies:
- Firstly wash peel and chop all the veggies in any shape of yo'r choice(round/length wise/triangles)(can take veggies of yo' r choice like button mushroom, bellpepper, sweet corn etc)
- Cut cheese in trangles and fry in little bit of ghee till golden brown and keep aside
- Heat oil in a heavy bottom pan..add pinch of asafoeteda and roast fo' 30seconds..add red pepper powder, turmeric powder, green chilli and saute fo' about 1 minute at slow heat.. Add all the chopped veggies..Add salt and saute fo' about 2-3minutes on high flame then let it to cook fo' about 10 minutes on slow flame by covering the lid(don't pour water as let it to cook in it's own moisture)
- Check whether all the veggies have cooked properly by inserting a fork or a knife in the cauliflower floret as cauliflower take more time to cook than the other veggies..add garam masala, coriander/cilantro leaves(keep some cariander /cilantro leaves aside fo' garnishing on top) and give a good mix
- Yo'r mix veggies is ready.. Transfer in a serving plate or a bowl
- Garnish with coriander/cilantro on top, spread fried cheese triangles over and drizzle drops of hot desi ghee around fo' a soothing aroma
- Serve hot with chapatti or naan
- π U can make mix veggies by stirfry method also on special occasion..at that time u have to stir fry one by one all the veggies in little- little quantity of oil then give tadka..in this method little more quantity of oil and some more time consumed
