- Get 1 bowl Rice
- Get 100 gm Peas

- Prepare 1 tbs Cumin seed
- Take Bay leaves
- Make ready 4 piece cloves
- Prepare 2 small piece cinnamon
- Get 1/4 tbs Asafoetida
- Prepare as per taste Salt
- Make ready 1 tbs Turmeric powder
- Take 2 Green cardamom
- Take 1/4 tbs Garam masala
- Prepare 1/2 tbs Red chilli powder
- Get 1 tbs Deggi mirch
- Make ready 1 tbs Garlic ginger paste
- Prepare 2 Green chilli finely chopped
- Take 1 spoon Kasuri methi
- Prepare as required Mint
- Get As required Coriander leaves chopped
It became very popular as one of the most nutritious, rich and royal foods. Since the authentic hyderabadi biryani was dum cooked with meat, ghee, nuts and yogurt, it was considered as a nutritious and wholesome dish. I use a lot of the veg to either make veg tikkis with runny fried eggs for breakfast or as part of a main meal which includes spiced salads.
Steps to make Veg dum biryani:
- Soak rice in a bowl for half an hour
- For barista take onion vetically thinly sliced and deep fry it in vegetable oil. When it turns golden brown keep it aside
- For marinationTake cheese slices in a bowl add salt, 2 -3 spoon curd, 1/4 tbs turmeric powder, 1/4 tbs kasoori methi mix all ingredients well and keep it aside for half an hour
- Boil soaked rice in a pan, take water and boil it now add soaked rice, 1 tbs salt, cumin seed 1/2 tbs' 1 bay leaf, 2 cloves and 1 small piece, 1 small piece cinnamon and boil it until it cooked 85%
- Remove pan from heat and drain rice in a colander. You may add a teaspoon of ghee to the rice. Set aside.
- Take a big pan with heavy bottom add 3-4 tbs oil add bay leaf,green cardamom' 2 cloves, small cinnamon piece, cumin seeds, asafoetida and saute it well untill it becomes aromatic
- Now add ginger garlic paste, chopped onion and saute it well untill it turns golden brown
- Now add all vegetables and saute it and you can also add soya chunks and fry it well now add tomatoes, mint leaves, coriander leaves and saute it until it turns aromatic now add curd in it.
- Add all the spices and mix it well add barista fried onion in it and again mix well
- Now add drained rice spread it evenly now add marinated cheese pieces and spread another layer of rice and lemon juice and desi ghee on side of the pot
- Now cover the pot with wet cloth and after that with a lid and do the flame slow.
- Cook it for 5 mins in steam at a low flame
- Check whether rice are properly cooked. If yes than fluff up the biryani with the serving spoon gently.
- Serve hot biryani to your family.
