Carrot, cauliflower, French bean, green pea and tomato in this recipe. Other favorite vegetables are capsicum and potatoes. To begin with, melt the butter or ghee i n a thick bottom pot or pan. Peel and finely slice the onions, garlic and ginger.
Steps to make Veggies Biryani:
- Wash and soaked rice for half an hour.After that cook simple rice about 80%in rice cooker.
- One side we cook rice and on the other hand In a kadai heat oil add all washed and chopped veggies with red chilli powder,haldi,salt and garam masala cook on high flame.
- Now after cooking rice and vegetables.Heat heavy bottom pan or rice cooker pour ghee also add all spices when they splutter add one ladle cooked vegetables, curd, little salt and some red chilli powder stir well.
- Now put layer of rice over this again add layer of vegetables and then rice.
- Again final layer of veggies, sprinkle some dry pudina,sliced green chillies and cover with a lid cook for 2 to 4 min.on low flame.
- Off the flame let it cook on (dum) its own heat. Open the lid and Veggies Biryani is ready to serve garnish with coriander leaves.
Roughly chop the tomatoes and chilli (deseed if you like), then add to the pan. Mix the rice and green beans with the vegetables in the tin, then pour over the stock mixture. Stir in the lemon juice and check the seasoning, then scatter over the coriander and cashew nuts. Nothing like a good plate of aromatic biryani!
