  1. In a heavy bottom pan add grated carrots milk sugar ghee mix well.
  2. Once mixture starts boiling continue mixing on high flame at regular intervals to avoid mixture from sticking to bottom
  3. Meanwhile grease a thali or tray u can use silver foil or butter paper at the bottom apply little ghee in it too
  4. Once the carrot mixture is reduced add cardomon powder finely chopped nuts keep mixing further on high heat
  5. Once mixture looks dry ghee seperates out and the colour looks dark remove from heat
  6. Transfer to the greased tin garnish with chopped nuts flatten put the surface wait 10 minutes then apply square cuts and keep.
  7. Wait till mixture cools down then separate the pieces they stay for about 15 days outside in airtight containers

Grated carrots are cooked in flavored milk, then sautéed with almond flour for a fudge-like consistency. In this easy recipe, I reduce the cooking time and effort considerably, using an Instant Pot.
