Get ready with all the ingredients,measure and set aside. First add ghee,carrot and coconut to a pan. Saute for few mins until raw smell of carrots leave. Add in the puree and cook till the mix gets dry and raw smell leaves from carrot.
Steps to make Tricolor Burfi (With Carrot,Paneer and peas-Natural ingredients):
- For making orange base - peel and grate the carrots,then add grated carrots in mixer jar and give it a spin (not much)so it will become fine to make burfi.heat ghee in a pan add carrots,cook until moisture evaporates, add sugar stir for few minutes,add milk powder /mawa stir continue till well combined,add cardamom powder and mix well and switch off the flame.
- For making green peas base – grind peas in mixer jar to make paste, heat ghee in a pan,add ground peas and cook until moisture evaporates, (stir continuously)add mawa stir well add sugar cook for few minutes until mixture leaves the side of the pan,add cardamom powder and switch off the flame.
- For white base – Grind together paneer and cashews in grinder add sugar and again give it a nice spin.Heat ghee in a pan,add paneer cashew mixture and cook until mixture leaves side of the pan.add rose essence,mix well and switch off the flame.
- Now in a greased tray set all layers of mixture one by one nicely, sprinkle some almonds and pista flakes on top, pat it and let it set completely.
- After that cut it into pieces and serve.
Now add in milk and cook till the carrot is cooked and milk is evaporated. Add in sugar and mix well. Keep cooking till it gets little thick.
