Instructions to make Carrot barfi:
  1. Put milk in a vessel and place it on flame for boiling.
  2. When milk starts simmering add grated carrots in it and mix really well. Stir at regular intervals.
  3. Chop cashews-almonds in small pieces, peel cardamom and make powder.
  4. Crumble the mawa as well.
  5. When milk dries completely and ghee into it and stir constantly for 3-4 minutes. Roast it nicely.
  6. When carrots are roasted nicely. Add sugar into it and mix well.
  7. Now stir it continuously until water dries completely frpm the carrots
  8. When water dries add mawa into it and mix well.
  9. Keep stirring constantly and roast until it's juice dries up completed.
  10. When carrots dry completely. add cashew powder, almonds pieces, cardamom powder and mix everything nicely.
  11. Barfi is ready, turn off the flame. Take one plate, grease it with some ghee.
  12. Now place the barfi batter in the plate and spread it evenly.
  13. Garnish with some half cut cashews. Keep the barfi aside to cool.
  14. When it cools down and sets, cut it into pieces as per your perference
  15. Store the carrot barfi into refrigerator snd relish eating for upto 1 week

Grated carrots are cooked in flavored milk, then sautéed with almond flour for a fudge-like consistency. In this easy recipe, I reduce the cooking time and effort considerably, using an Instant Pot. In a heavy bottomed pan, heat ghee, add coconut and carrot to it. Fry until the raw smell of carrot goes away and becomes fragrant.
