Carrot Burfi is a delicious desert made by slowly cooking carrots in condensed milk, ricotta cheese and garnished with nuts. In a wide bowl add the ground carrot mixture, sieved besan, sugar and start stirring in a medium low flame. Be careful not to get it burnt. Melt the ghee and add it slowly in regular intervals.

- Wash and grate the carrots.
- Now saute mava on slow flame for 5 minutes and keep aside.
- Now heat desi ghee add the grated carrot,saute till becomes dry,Add sugar and Cardamom and nutmeg powder,mix well..
- Cook till it looses the pan.
- Now add the sauted mava mix well.
- Now cook for 7 minutes on slow flame,take it down let it cool for 5 minutes,take mould and make burfis,decorate with cashews.
- Put it freezer for 10 minutes burfi is ready to serve.
