  6. Get 1/4 Cup grated organic jaggery

  8. Take 6-7 Saffron Strands

By the way, in Punjab it is called halwa as Gajrela. During the winters season, we make gajar ka halwa mostly. Carrot Halwa also known as Gajar ka Halwa is popular in North India and it is generally made during the winter season. In carrot halwa recipe, carrots, milk, ghee and sugar are added.

Instructions to make Carrot Halwa:
  1. Deseed dates and Soak in warm water for 1 hour and Soak dry fruits for at least 4 hours to make them active.In mixi jar add Soaked dates with little water and Grind to fine paste.keep aside.Peel of Almonds and Chop Dry fruits.soak saffron in 1 tbsp warm water.In a mixi jar add fresh coconut and 1 Cup water Grind it to make fine puree.strain it to make Coconut milk.
  2. In a earthern pot add grated carrots, dates paste, salt and mix well.cover and let it cook on low flame.Stirr it occasionally.Add Coconut milk,and mix it.cover and cook for 10-12 min till carrot is cooked.Add saffron Soaked water.mix it.
  3. Add chopped nuts,Cardamom powder.Mix well.cook for 1-2 min.Never Heat Coconut on direct Heat as it looses it's nutrients.
  4. Satvik,nutritious,Delicious carrot halwa is ready.Keep in fridge for 30 min and Serve it by garnishing with nuts.

But you can also add cardamom powder and finely or roughly chopped dried fruits in it. You can also use milkmaid or khoya instead of milk and sugar. Once the milk has evaporated, add the Saffron milk (optional), add sugar, cashew, cardamom powder, cook the halwa till the milk has completely reduced. As Meera Sodha puts it in Fresh India:.
