Carrot Jam is one of the most popular of recent trending meals in the world. It is easy, it’s fast, it tastes yummy. It’s enjoyed by millions daily. They are fine and they look wonderful. Carrot Jam is something that I’ve loved my entire life.
To get started with this particular recipe, we have to first prepare a few components. You can have carrot jam using 5 ingredients and 6 steps. Here is how you can achieve that.
The ingredients needed to make Carrot Jam:
- Prepare 760 g carrots
- Get 450 g light brown sugar
- Get 2 lemons, zest of one lemon and juice of two lemons
- Prepare Small pinch of seasalt
- Get 2 tbsp vanilla
In this Persian inspired easy carrot jam recipe, I've used all three. If refrigerating or freezing, cool to room temperature first. Switch off the flame and wait until the pressure go off. Wash, peel the carrots and place them in saucepan with water.
Instructions to make Carrot Jam:
- Peel all the carrots and grate about 60g from the quantity.
- Chop the rest of the carrots and add to a saucepan. Add just enough water to cover all the carrots and add a pinch of salt.
- Cook the carrots until soft and then drain and puree.
- Using a fine sieve push out any excess water from the carrots (I reserved the water as I was planning to make carrot soup).
- Put the grated carrots, vanilla, lemon zest and lemon juice and pureed carrots into a saucepan. Add the sugar and bring to the boil and cook for about 10-15 minutes continously stirring until the jam has thickened. It may take slightly longer to thicken.

When the carrots are cooked, cut them into small pieces. Place the carrot pieces together with the sugar, cinnamon stick and the orange juice in a saucepan over medium heat. Put grated carrots and water in a large pan over high heat and bring to boil until carrots are tender. Add the lime (or lemon) juice and zest. The carrots in my jam are out and proud.
